I’m frequently asked about easy healthy lunches. I usually have an organic fruit (strawberries or a Granny Smith Apple) along with my main lunch food.
Here are some of my favorites:
-Egg salad: Hard boiled eggs, mixed with mashed avocado and bacon
-Chicken Salad with paleo mayo, walnuts and sliced grapes served over organic spinach
-Salads with organic spinach, skinny buffalo chicken fingers, blue cheese, bacon, hard-boiled egg and tomatoes
-Canned Tuna mixed with mashed avocado, chopped celery, craisins
-Turkey breast wrapped in butter lettuce with a slice of avocado, a slice of cooked bacon and onions (depending on whether you can enjoy onions for lunch and not breathe on others)
-Dinner leftovers-I love having my dinners as lunches the next day.
